Banana Cake

Banana cake with praline brown sugar topping


INGREDIENTS

Cake

  • 1 cup butter

  • 1 1/2 cups sugar

  • 2 eggs

  • 4 bananas

  • 1 teaspoon vanilla extract

  • 4 tablespoons buttermilk

  • 2 cups flour

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon salt


Topping

  • 3 tablespoons butter

  • 5 tablespoons brown sugar

  • 2 1/2 tablespoons milk

  • 1/2 cup chopped pecans


RECIPE

Cake

  1. Preheat oven to 350˚.

  2. Cream butter & sugar.

  3. Beat eggs & add to mixture.

  4. Mash bananas.

  5. Add bananas, vanilla & buttermilk to mixture.

  6. Sift flour, baking soda & salt in a separate bowl & add to mixture.

  7. Mix well until all dry ingredients are incorporated.

  8. Grease & flour a flouted bunt pan (or 2 loaf pans).

  9. Pour mixture into pan.

  10. Bake 45-50 minutes until golden brown & tooth pick comes out clean.


Topping

  1. Toast pecans & coarsely chop.

  2. Melt butter in a small saucepan.

  3. Add sugar & milk to saucepan & cook until syrupy (sugar completely dissolved).

  4. Remove from heat & mix in pecans.

  5. Pour over bread.


P.S. This can be made into muffins too.
