Banana cake with praline brown sugar topping
INGREDIENTS
Cake
1 cup butter
1 1/2 cups sugar
2 eggs
4 bananas
1 teaspoon vanilla extract
4 tablespoons buttermilk
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
Topping
3 tablespoons butter
5 tablespoons brown sugar
2 1/2 tablespoons milk
1/2 cup chopped pecans
RECIPE
Cake
Preheat oven to 350˚.
Cream butter & sugar.
Beat eggs & add to mixture.
Mash bananas.
Add bananas, vanilla & buttermilk to mixture.
Sift flour, baking soda & salt in a separate bowl & add to mixture.
Mix well until all dry ingredients are incorporated.
Grease & flour a flouted bunt pan (or 2 loaf pans).
Pour mixture into pan.
Bake 45-50 minutes until golden brown & tooth pick comes out clean.
Topping
Toast pecans & coarsely chop.
Melt butter in a small saucepan.
Add sugar & milk to saucepan & cook until syrupy (sugar completely dissolved).
Remove from heat & mix in pecans.
Pour over bread.
P.S. This can be made into muffins too.
