INGREDIENTS
1 cup butter
1 1/2 cup sugar
2 eggs
2 over ripe bananas
2 cups grated zucchini
1 1/2 teaspoon vanilla
4 tablespoons buttermilk
2 cups flour
1 1/2 teaspoon baking soda
1 teaspoon salt
Topping: 3 tablespoon sugar + 2 teaspoon cinnamon
RECIPE
Preheat oven to 350˚.
Grease & flour 1 bundt pan (or 2 bread pans)
In an electric mixer, cream butter & sugar.
Beat eggs & add to mixture.
Grate zucchini (squeeze out as much liquid as you can) & mash bananas & add both to mixture.
Add buttermilk & vanilla.
Sift flour, baking soda & salt & add to mixture. Mix until just combined (do not over mix).
Pour into greased pan.
Bake for 45-50 minutes (test with cake tester or toothpick).
For the topping, mix sugar & cinnamon together.
After cake has cooled slightly, invert on a serving plate & sprinkle with topping.
