Banana Zucchini Cake

INGREDIENTS

  • 1 cup butter

  • 1 1/2 cup sugar

  • 2 eggs

  • 2 over ripe bananas

  • 2 cups grated zucchini

  • 1 1/2 teaspoon vanilla

  • 4 tablespoons buttermilk

  • 2 cups flour

  • 1 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • Topping: 3 tablespoon sugar + 2 teaspoon cinnamon


RECIPE

  1. Preheat oven to 350˚.

  2. Grease & flour 1 bundt pan (or 2 bread pans)

  3. In an electric mixer, cream butter & sugar.

  4. Beat eggs & add to mixture.

  5. Grate zucchini (squeeze out as much liquid as you can) & mash bananas & add both to mixture.

  6. Add buttermilk & vanilla.

  7. Sift flour, baking soda & salt & add to mixture. Mix until just combined (do not over mix).

  8. Pour into greased pan.

  9. Bake for 45-50 minutes (test with cake tester or toothpick).

  10. For the topping, mix sugar & cinnamon together.

  11. After cake has cooled slightly, invert on a serving plate & sprinkle with topping.
