An everyday lunch

INGREDIENTS
1 roasted chicken
3 scallions, finely chopped
1/4 cup candied pecans or walnuts, chopped
1/4 cup dried cranberries, chopped
1/2 cup mayo
3 tablespoon dijon mustard
2 tablespoon honey
1/2 teaspoon salt (or to taste)
Fresh ground pepper
RECIPE
Pull all of the meat from the roasted chicken & place in a bowl.
Add scallions, salt & pepper.
Mix mayo, mustard & honey in a small mixing bowl. It should look like a thick dressing.
Stir dressing into the pulled chicken & add cranberries & nuts until just mixed.
Add more salt and pepper to taste.
Serve on a sandwich or with shredded lettuce and tomatoes!
