Honey Mustard Chicken Salad

An everyday lunch


INGREDIENTS

  • 1 roasted chicken

  • 3 scallions, finely chopped

  • 1/4 cup candied pecans or walnuts, chopped

  • 1/4 cup dried cranberries, chopped

  • 1/2 cup mayo

  • 3 tablespoon dijon mustard

  • 2 tablespoon honey

  • 1/2 teaspoon salt (or to taste)

  • Fresh ground pepper


RECIPE

  1. Pull all of the meat from the roasted chicken & place in a bowl.

  2. Add scallions, salt & pepper.

  3. Mix mayo, mustard & honey in a small mixing bowl. It should look like a thick dressing.

  4. Stir dressing into the pulled chicken & add cranberries & nuts until just mixed.

  5. Add more salt and pepper to taste.

  6. Serve on a sandwich or with shredded lettuce and tomatoes!
