INGREDIENTS
4 pieces salmon (~6 oz each)
1 cup pistachios, chopped
1 tablespoon olive oil
4 tablespoons dijon mustard
2 tablespoons honey
Salt
Pepper
RECIPE
Preheat oven to 375˚.
Place salmon on a parchment-lined sheet pan.
Season generously with salt & pepper.
Combine olive oil, dijon mustard & honey in a bowl. Stir until smooth.
Add pistachios to mixture & mix until combined.
Spoon mixture on salmon. Coat each piece generously & press down the nuts on top.
Bake for 15 minutes for medium, or until desired temperature.
