Pistachio Crusted Salmon



INGREDIENTS

  • 4 pieces salmon (~6 oz each)

  • 1 cup pistachios, chopped

  • 1 tablespoon olive oil

  • 4 tablespoons dijon mustard

  • 2 tablespoons honey

  • Salt

  • Pepper


RECIPE

  1. Preheat oven to 375˚.

  2. Place salmon on a parchment-lined sheet pan.

  3. Season generously with salt & pepper.

  4. Combine olive oil, dijon mustard & honey in a bowl. Stir until smooth.

  5. Add pistachios to mixture & mix until combined.

  6. Spoon mixture on salmon. Coat each piece generously & press down the nuts on top.

  7. Bake for 15 minutes for medium, or until desired temperature.
