Maple syrup, almonds & marshmallows
INGREDIENTS
Serves 6-8
6 large sweet potatoes (or yams)
1 stick butter
1/2 cup maple syrup
1/2 cup sliced almonds, toasted
1 tablespoon cinnamon
1 bag mini marshmallows
RECIPE
Peel sweet potatoes & cut into large chunks.
Add sweet potato chunks to large pot & cover with water. Bring to a full simmer & continue to cook for about 10 minutes. You are only blanching because they will continue cooking in the oven. Drain the potatoes & place in a large roasting pan.
While the sweet potatoes are blanching, melt the butter in a small saucepan. Add the maple syrup & bring to a boil. Remove from heat.
Sprinkle toasted almonds and cinnamon on top of the sweet potatoes. Pour the melted butter and syrup mixture all over & mix everything together. You can do this the day before, cover & refrigerate.
Preheat oven to 450˚.
Roast sweet potatoes until they start to brown & become crispy & gooey (~45 minutes). Remove from oven.
Right before serving, cover the sweet potatoes with marshmallows & broil for 3 minutes until they start to brown.
