"Healthy" Chinese dinner
INGREDIENTS
Sauce
2 tablespoons rice vinegar
4 teaspoons oyster sauce
1 1/2 tablespoons hoisin sauce
2 teaspoons soy sauce
1 1/2 teaspoons brown sugar
1 teaspoon pepper
3 teaspoons cornstarch
1/2 cup chicken stock
Shrimp
2 lb shrimp
2 tablespoons sesame oil
2 garlic cloves, minced
1 inch ginger, minced
1/2 jalapeño, minced & seeds removed
1 red bell pepper, diced
1 small yellow onion, diced
2 tablespoons black bean sauce (can find at most Asian markets)
1 tablespoon sherry wine
3 scallions, sliced
1 head of broccoli
Salt
Pepper
RECIPE
Combine all sauce ingredients in a bowl & set aside.
Heat a wok or large sauté pan for 1 minute & add sesame oil.
Add garlic, ginger, jalapeño, red pepper & onion.
Sauté until soften & starts to brown.
Add black bean sauce & stir for 1 minute.
Cut broccoli into small pieces & steam until bright green. My trick is to put the cut broccoli into a glass bowl with 1/4 cup of water & covered with Saran Wrap & cook in microwave for 2 minutes.
Add steamed broccoli to wok & cook for 3 minutes.
Add sherry wine around the edge of the pan & mix well.
Add shrimp. When shrimp begins to curl, add sauce & continue cooking until shrimp is cooked through.
After sauce begins to thicken, season with salt & pepper.
Sprinkle with scallions & serve.
