Shrimp & Broccoli with Black Bean Sauce

"Healthy" Chinese dinner


INGREDIENTS

Sauce

  • 2 tablespoons rice vinegar

  • 4 teaspoons oyster sauce

  • 1 1/2 tablespoons hoisin sauce

  • 2 teaspoons soy sauce

  • 1 1/2 teaspoons brown sugar

  • 1 teaspoon pepper

  • 3 teaspoons cornstarch

  • 1/2 cup chicken stock


Shrimp

  • 2 lb shrimp

  • 2 tablespoons sesame oil

  • 2 garlic cloves, minced

  • 1 inch ginger, minced

  • 1/2 jalapeño, minced & seeds removed

  • 1 red bell pepper, diced

  • 1 small yellow onion, diced

  • 2 tablespoons black bean sauce (can find at most Asian markets)

  • 1 tablespoon sherry wine

  • 3 scallions, sliced

  • 1 head of broccoli

  • Salt

  • Pepper


RECIPE

  1. Combine all sauce ingredients in a bowl & set aside.

  2. Heat a wok or large sauté pan for 1 minute & add sesame oil.

  3. Add garlic, ginger, jalapeño, red pepper & onion.

  4. Sauté until soften & starts to brown.

  5. Add black bean sauce & stir for 1 minute.

  6. Cut broccoli into small pieces & steam until bright green. My trick is to put the cut broccoli into a glass bowl with 1/4 cup of water & covered with Saran Wrap & cook in microwave for 2 minutes.

  7. Add steamed broccoli to wok & cook for 3 minutes.

  8. Add sherry wine around the edge of the pan & mix well.

  9. Add shrimp. When shrimp begins to curl, add sauce & continue cooking until shrimp is cooked through.

  10. After sauce begins to thicken, season with salt & pepper.

  11. Sprinkle with scallions & serve.
