INGREDIENTS
*Serves 4-6
1/4 cup fresh squeezed lime juice
1 tablespoon fish sauce
1 tablespoon sugar
1 teaspoon crushed red pepper
1 clove garlic, grated
2 tablespoons canola oil
6 Persian cucumbers
1/2 cup salted roasted peanuts, chopped
1/2 small red onion
1 tablespoon cilantro, chopped (optional)
Kosher salt
RECIPE
In a small bowl, whisk lime juice, sugar, red pepper flakes, grated garlic & oil.
Cut cumbers in half (lengthwise) & remove the seeds. Cut halves into 1/4 inch slices.
Slice red onion very thin.
Place cucumbers in a large bowl with peanuts, onion & cilantro.
Add dressing, toss & coat.
Season with salt & serve.
