Thai Cucumber Salad with Peanuts



INGREDIENTS

*Serves 4-6

  • 1/4 cup fresh squeezed lime juice

  • 1 tablespoon fish sauce

  • 1 tablespoon sugar

  • 1 teaspoon crushed red pepper

  • 1 clove garlic, grated

  • 2 tablespoons canola oil

  • 6 Persian cucumbers

  • 1/2 cup salted roasted peanuts, chopped

  • 1/2 small red onion

  • 1 tablespoon cilantro, chopped (optional)

  • Kosher salt


RECIPE

  1. In a small bowl, whisk lime juice, sugar, red pepper flakes, grated garlic & oil.

  2. Cut cumbers in half (lengthwise) & remove the seeds. Cut halves into 1/4 inch slices.

  3. Slice red onion very thin.

  4. Place cucumbers in a large bowl with peanuts, onion & cilantro.

  5. Add dressing, toss & coat.

  6. Season with salt & serve.
